Before the advent of inverters, what means were used to control motors/industrial drives?

Control was mechanical after the motor. Gears and pulleys were used to control speed. Before the advent of inverters, what means were used to control motors/industrial drives?
I have seen a variable speed motor running by having the motor electric supply leads attached to rods. Then the rods were raised or lowered in differing depths of baking soda solution. These rods were about 1 inch in diameter and the baking soda tanks around 500 gallons each.

Deeper into the tank, the faster the motor ran. More amps were allowed.

The rods have to be replaced every few months from erosion from usage. These were on 2100 volt systems with 750 horsepower motors running pumps in 2 different pump stations at Kansas City Mo.
